Minervois is an appellation located in the Mediterranean Rim part of France known in general as Languedoc-Roussillon. More specifically, it is situated at the foot of the Black Mountain between Narbonne and Carcassonne. Christian Mignard makes this wine from a vineyard of about 15 acres on the high terraces composed of clay-limestone.
The appellation La Livinière is considered the most typical and some of the best terroir in the overall appellation of Minervois.
Syrah, Grenache and old vine Carignan (usually less that 25%) make up the blend for Christians premium wine, Cuvée Les Trois Clochers. Using traditional production techniques, the Grenache and Syrah are kept in vat for over three weeks to insure maximal extraction and the old vine Carignan is vinified using carbonic maceration to add a fresh berry component to this cuvée.
A limited ageing in French oak barrels follows the vinification to further add savory and opulent notes to this full-bodied wine.
This wine has a rich deep violet and ruby color with an opacity that promises concentrated flavors. Deep spicy fruit aromas, with a touch of toastiness, fill the glass and follow through to fill the palate with rich fruit flavors that linger long. The well-structured tannins are ripe and soft and give the fruit something to hang on to.
