Romilhac Label Domaine de Romilhac, a small 25 acre property was acquired by Elie and Nadia Bouvier in 1992, after which the property, winery and barrel ageing cellar were completely renovated. Situated in the commune of Narbonne, their vineyards are composed of deep and very old limestone and clay soils sloping east towards the Mediterranean thus benefiting from the sun from the moment of sunrise, and are planted to old Syrah, Grenache, Cinsault and Carignan vines.

For "Les Terrasses", the yield is kept low at 30 hl/ha for the best quality fruit possible. The wine is made from old Syrah vines (70%), old Grenache vines (20%), and 10% Carignan. Following manual harvest, each grape variety (cépage) is vinified separately using "pigeage", or cap punch-down, to keep the grape skins in contact with the juice during fermentation. The wines undergo malolactic fermentation in French oak barrels (30% new). The Syrah stays for 12 months on the lees whereas the Grenache and Carignan are blended sooner. The final blend is aged an additional 4 months in stainless steel vats before bottling.

"Les Terrasses" has a deep garnet color, with a nose of bright fruit of raspberry and blackberry with herbal and earthy tones. Soft fruit impressions on the palate are sweet and round with depth of fruit on the palate.
