The Fabre family has been making wine on their 15 hectares (37 acres) property for four generations. Jean-Marie Fabre and his wife Emilie preside over the vines and the production and are some of the most passionate winemakers that I know. Situated in the village of Fitou, cradle of the appellation, their vineyards are planted in soils that are a mélange of hard limestone, clay and schist, and the vines benefit from a warm, dry climate, where the reigning masters are the Sun and the "Tramontane", the gentle breeze that comes in from the northwest to the Mediterranean Coast.

For the last 20 years, the vineyards have been managed using the "Méthode Cousinié", where the vines are fertilized only with high quality organic matter, with careful pruning to maintain the right balance of foliar growth. This maintains the vigor of the soil giving the vines strength to resist mold and pest environmental pressures, and together with the tramontane, which keeps the humidity low, there is a minimal need for intervention. The vineyards are planted Grenache noir, Carignan, Mourvèdre and Syrah and these grapes are used in varying percentages depending on the cuvée (blend).

Les Asphodèles is the dry Rosé wine made by Jean-Marie Fabre that is based on Grenache Noir and Syrah. As in any great rosé wine, the grapes are harvested and vinified in a manner that preserves all the freshness, vivacity and fruit aromas. This is truly a wine of summer that pairs well with deli meats, fish and white meats such as poultry or pork. It is fabulous for those relaxing summer lunches or picnics to accompany all types of salads, light cheeses and fruit.
