Château Rives Blanques label Château Rives-Blanques is one of the few independent vineyards in the South of France specializing in quality white wines. Situated on a plateau 1150 feet above the Aude Valley in the Pyrenees foothills (just south of Carcassonne), this property benefits from the cooler breezes from the mountains and produces wines showing abundant fruit, smooth and round, almost New World but truly French in the balanced acidity and complexity from ageing in mature French oak barrels. Consulting oenologist, Georges Pauli of Gruaud Larose, St. Julien, and a Catalan by heritage, is taken with the property being in what was once Catalonia.

The grapes for this wine come exclusively from the best (and lowest) Mauzac field, south-facing at 900 ft altitude, from vines of 20 years. High in acidity, Mauzac is ideal for sparkling wines and is used as the base of Blanquette de Limoux. This Renaissance grape variety is notoriously difficult to vinify as a still wine, and Cuvée Occitania is the only example of it in the appellation. The grapes from this moderate yield vineyard (35hl/ha) are hand harvested and pressed within 2 hours to preserve freshness. The must is then fermented and matured for 8 months in one and two year old French oak barrels.

Mauzac is difficult to vinify as an interesting still wine for the same reasons that make it such a good base for sparkling wines: high acidity and a fairly neutral taste. By encouraging the Mauzac on our lowest south-facing slopes to reach an unusually high level of maturity, we were able to produce this unique still wine, which has been included by La Revue du Vin de France in its roundup of the best wines of the millésime in France for the past four years in a row.
