The appellation Entre-Deux-Mers is reserved for the white
wines produced in the enormous triangle of land that lies
between the Dordogne and Garonne Rivers (so what if Entre-Deux-Mers
actually means between two seas!) and is typically produced
with Sauvignon Blanc and Sémillon grapes with often
a touch of Muscadelle.
Château Bois-Malot, located in Saint Loubes and situated
on the shoreline of the Dordogne River, produces Entre-Deux-Mers
from 2 hectares of vineyards from vines with an average age
of 15 years. The soils are clay and light limestone with a
subsoil of red pebbles and clay.
Using both Sauvignon Blanc and Sauvignon Gris (55% in total),
blended with 45% Sémillon, the fermentation of the
juice is carried out at low temperature to preserve freshness
of the fruit. Before the onset of the fermentation, about
40% of the juice is macerated in presence of the skins to
increase the body of the wine.
A further 3 month ageing in stainless steel vats “sur
lies fines” (on the fine lees or sediment) increases
the complexity of the wine.
This wine is floral and has a body not often found in white
Bordeaux wines. It makes a great white sipping wine and goes
well with salads, picnic fare and fish & poultry.
