Domaine de la Meulière is owned by the Laroche family in the small village of Fleys, about 4 km from Chablis, and has been making wine on the property since the end of the 19th century, for four generations. The current generation, Vincent and his brother Nicolas, produce a range of wines from Petit Chablis to Chablis 1er Cru. Exclusively planted in Chardonnay, the vines produce white dry wines of a pale yellow color that are lively and powerful with the ability to age well. In the cellars, the vinification of their wines is done with the utmost of care, loyal to family traditions and ancient methods long used in Chablis, while at the same time adopting new techniques for greater quality. Following manual harvesting, the alcoholic fermentation is done at reduced temperature 18°C (65°F) and is followed by malolactic fermentation.
The Chablis produced at Domaine de la Meulière is crisp and lively in its youth and will fill out over 2-3 years producing a wine of elegance and depth. This quality level of Chablis is known as the “Villages”, meaning that this is the best terroir available before moving on to the Premier Crus.
Serve chilled along with shellfish, fish, fine prepared meats and many lightly seasoned dishes of poultry or vegetables. It also makes a great aperitif.
