Domaine des Moirots is a family property that has been producing wine on about 30 acres of vineyards in the southern portion of the Cote Chalonnaise, the region just to the south of the Cote de Beaune. Christophe Denizot handles the operation and produces a collection of Chardonnay and Pinot Noir based wines from his carefully tended vineyards using time-tested traditional methods blended with modern techniques to produce fine wines from the healthiest vines.
His Givry is produce exclusively from Pinot Noir (as is actually all Givry red wine) from about a 2 acre parcel with vines of an average of 30 years. The fermentation lasts for about 15 days with the skins pushed down at least twice a day for maximum skin contact. The wine is then aged in their cellars barriques for a year before bottling, without filtration.
The wine is a brilliant ruby color with violet notes. The bouquet is elegant with aromas of red raspberry and blackberry, and light toasty notes from the barrel ageing. The wine is supple and full bodied and the rich Pinot Noir fruit is powerful, all the while maintaining an elegance and roundness that is pleasing with a long finish. The toasty notes from the barrel are present and meld with the fruit as the wines opens in the glass. This is a lovely and affordable Pinot Noir in the Burgundian tradition.
