Emile Herard and his son-in-law Georges Fluteau founded the
house of Herard & Fluteau in 1935. Following generations
of the family have inherited the dedication and flair of these
two men, and the torch is now carried by Thierry Fluteau,
the third generation of this Champagne producing family. The
8 hectare vineyard is situated on the Cote des Bar in the
southern Aube district of the Champagne appellation. On their
sunny hillsides, they grow predominantly Pinot Noir, which
thrives there and is renowned for giving body and texture
to the wine.
The Brut Carte Rubis is Thierry’s Brut Rosé
made from 100% Pinot Noir. The method of production is called
saignée which means “bleed-off”, where
the juice fermenting on the partially fermented grapes is
transferred from the fermentation must to another vat. The
now slightly colored juice is allowed to ferment to dryness
producing a crisply fruity rosé wine that is then turned
into a bold and forward brut rosé champagne.
