Château Haut Lignières was established in 1994 when Mrs. Elke Kreutzfeldt fell in love with the terroir of Faugères. The vines are located on the steep and broken schist slopes of the village of Cabrerolles and the winery located in an ancient windmill. These folks are part of a 7 member group who adhere to strict viticultural practices with restricted use of pesticides, no herbicides, and are therefore entitled to use the “3 Tower” logo imprinted on their bottles.
Their 37 acre southern facing vineyard allows excellent grape maturation, and the low yields of the 30 year old vines (32 hl/ha) allows for good concentration. The grape must is cold soaked before fermentation and rémontage twice daily ensures excellent flavor and color extraction.
Carmina Butis is the premium wine of Haut Lignières and is made from Syrah, Mourvèdre and Grenache. Fermented and vinified in stainless steel vats, the wine is then raised in French oak barrels for up to 16 months, and blends well with the ultra-ripe sweet fruit giving a good balance between fruit and oak.
The wine is deep purple red in color with a powerful and concentrated bouquet of candied fruit, toast, pepper and “tapenade” (black olive puree). The wine is full bodied with richness and balance.
The wine is drinkable now and will benefit from further bottle age.
It makes a great match with game or grilled meats, rack of lamb and rich stews. Try it with short ribs or ribs from the grill. Spicy sauces will show well also.
