 The
Depeyre family in the town of Visan produces this red wine from
the Southern Rhône river valley.
The village of Visan is north of the Vaucluse in the Enclave
des Papes and the "Clos" occupies some of the best
vineyard land in Visan that is chalky and stony clay. This Grand
Reserve, named "Cuvée Saint Clement" is produced
with grapes from 22-year-old vines in a south-facing hillside.
This wine is produced using mostly Syrah (90%), blended with
Grenache (5%), and Carignan (5%). Whole grape cluster maceration
and fermentation (in stainless steel) of about 8 days, is temperature
controlled to preserve the freshness of the fruit and to extract
the maximum of the color.
After fermentation, the wine is racked into underground concrete
tanks and aged for a full year after which it is immediately
bottled to guard freshness and color.
The aromas are quite attractive with grilled and toasty undertones
to complement the ripe fruits of red cherry, raspberry, figs,
and plums. Well-structured tannins and a soft acidity present
the full-bodied and round fruit flavors from start to finish.
Based entirely on the fruit without any oak ageing, this wine
can age well in the bottle for 10-20 years if kept well.
This is a great accompaniment to meats, roasted and grilled,
as well as game, poultry, and fowl and fare in sauces.
